Each Table meets at least once a month and typically hosts a series of creative adventures and activities called "Quests" which instruct children and youth, known as Fellows, in how to conduct a life of honor, chivalry, service, and devotion. Quests primarily involve role-playing stories from the Legends of King Arthur and his Knights of the Round Table. Fellows play themselves according to their rank in the Round Table, whether that be Page, Companion, or Squire. These story games allow children and youth to encounter hypothetical situations in a fantastical setting that promotes their understanding and practice of virtue and honor.

Other Quests conducted as part of meetings or camps may involve period-relevant (medieval) arts and crafts, live-action role-playing, and learning or service activities. Additionally, Quests may aid children and youth in completing various activities towards Shields of Achievement which promote rank advancement. Each Quest is overseen by at least two Adult Knights in the Round Table. The purpose of each Quest is to inspire and motivate each child or youth to discover their purpose and live a life of chivalry and service.

Shields of Achievement are part of the unique moral and practical framework inculcated by the Masonic Order of the Round Table. Each Shield represents tasks or goals which, when accomplished, allow the members to advance in rank, from Page to Companion, Companion to Squire, and from Squire to Knight. There are three types of Shields of Achievement: Devotion, Artisan, and Character. There are fifteen possible Shields of Achievement in each rank of the Round Table, five in each of the three categories. To advance to the next rank, a member must achieve twelve out of these fifteen shields calibrated to the rank they are in. If they achieve all fifteen, they will be granted a special distinction.
